How can I use the Z addresses in Trezor for ZCASH?

unfortunately, you can’t as Trezor devices currently support only T addresses for Zcash as can be found on our page with supported coins https://trezor.io/coins/detail/zcash
Z addresses may be supported in the future, however, we cannot provide any ETA as is currently not sure that we will implement support for shielded transactions.
Too bad such a nice function to keep coins private is not supported
