If I set up a Ledger device with a hidden wallet and later want to set up a matching Trezor with the same seed phrase only (no passphrase added), will Trezor Suite detect that there is a hidden wallet based on the 24-word seed phrase?

No that is not possible.
Trezor will not detected that you have previously created hidden wallet connected with this seed on another BIP39 compatible wallet/device (e.g. Ledger) and vice versa.
However if you use the same input (meaning passphrase), even initially created using different device you will access the same wallet.
