All my hidden wallet passphrases contained discouraged words(Chinese word), and after updating Suite, they are all now prohibited from being entered!

Are you putting in chinese characters, or ascii transliterations?
If ascii, you can enter on your Trezor, that should work.

I converted the Chinese characters to ASCII, UTF-8, and Unicode encodings, but the wallets they went into were not the same ones I used when I was using Chinese characters. All of them are new empty wallets.

You should be able to use non-ascii characters, but it is important to select the option to “Open previously used” and not “New passphrase”

There’s no need to convert it. Just make sure to always select the option “Open previously used”.
