If I have three different exchanges should I consolidate them and then use cold wallet? Or can I put the three into cold wallet? Pros or cons to this please.

maybe it is more natural for people to have it all on one consolidated address - the same way they are used to pile money on one bank account. So simplicity may belong to “Pros”.
But blockchain, compared to bank account, is readable to all. If you reveal your address by shopping or sending some amount to your friend, you reveal your privacy - and that’s something you should care about.
