Since becoming a Trezor owner many years ago, I have never been able to find out the process, and if it is necessary, to Sign & Verify transactions and also set-up a pass phrase. Why would you need to if no-one knows your PIN? If someone gets your Trezor device PIN, then what? Wwill te passphrase still protect your coins?
I believe a Youtube video is required to show users when they need to Sign & Verify, on which accounts they need to do it on the Trezor OR is it device Sign & Verify? An additional video on passphrases would not go amiss either.

If someone gets your device and knows your pin, they can only take the coins in your standard wallet, but not the coins in your hidden wallet.
Without the passphrase, you cannot use the coins in the hidden wallet, including you. If you forget the passphrase, you will not be able to send the coins in the hidden wallet corresponding to this passphrase.
I don’t know if you have heard of seed phrase collision.
Many people will use programs to keep trying combinations of seed phrases and scan the blockchain to see if there are coins on the address of this combination.
Although the probability of your standard wallet being hit is lower than winning 10 million in the lottery, it is not zero. So it is safer to use a seed phrase.
And if you encounter violent coercion, the other party can directly threaten you to open the standard wallet, but the hidden wallet can be set up indefinitely, and the other party cannot be sure how many hidden wallets you use.
